PINEAPPLE CASSEROLE

Ingredients:

  • 1/3 cup sugar

  • 5 tablespoons flour

  • 2 (20-ounce) cans pineapple chunks, drained (reserve 4 tablespoons)

  • 1 cup cream cheese

  • 1/2 cup cheddar cheese

  • 32 ritz crackers, crushed

  • 1/4 cup butter, melted  

Preparation:

1) Preheat oven to 350

2) In a medium bowl, combine the sugar, the flour, and the reserved pineapple juice.

3) Add the pineapple chunks to the flour mixture and toss well to combine.

4) Add cream cheese. 

5) Spoon the pineapple mixture into an 8x8-inch casserole dish.

6) Top the casserole dish with the shredded cheese.

7) Combine the crackers and the melted butter in a bowl.

8) Spread the cracker mixture on top of the pineapple mixture.

9) Bake the casserole until bubbly, about 30 minutes.
