SUMMER SQUASH CASSEROLE

Ingredients:

  • 2-3 zucchini, sliced bite size

  • 3 yellow squash, sliced bite size

  • 1 small onion, chopped

  • 1 medium carrot, peeled

  • 1 can cream of chicken soup

  • 1 16oz container sour cream

  • Optional: mix in dry chicken bouillon for additional flavor

  • 1 box Stouffers chicken stuffing

  • 1/4 cup melted butter

Preparation:

1) Boil zucchini, squash and onion to slightly less than preferred tenderness

2) Mix carrot, chicken soup, sour cream and bouillon in a large bowl

3) Fold in drained veggie mixture

4) In a greased 2 quart casserole dish, layer 1/2 veggie mixture, 1/2 stuffing mix, remaining veggie mixture and top with remaining stuffing mix.

5) Drizzle melted butter over top of casserole

6) Bake @ 350* for 30-45 minutes until thoroughly heated

7) Enjoy!
