SUMMER SQUASH CASSEROLE

Ingredients:
2-3 zucchini, sliced bite size
3 yellow squash, sliced bite size
1 small onion, chopped
1 medium carrot, peeled
1 can cream of chicken soup
1 16oz container sour cream
Optional: mix in dry chicken bouillon for additional flavor
1 box Stouffers chicken stuffing
1/4 cup melted butter
Preparation:
1) Boil zucchini, squash and onion to slightly less than preferred tenderness
2) Mix carrot, chicken soup, sour cream and bouillon in a large bowl
3) Fold in drained veggie mixture
4) In a greased 2 quart casserole dish, layer 1/2 veggie mixture, 1/2 stuffing mix, remaining veggie mixture and top with remaining stuffing mix.
5) Drizzle melted butter over top of casserole
6) Bake @ 350* for 30-45 minutes until thoroughly heated
